This last Valentine's Day was one of the best Derek and I have ever had. We had the opportunity to be escorts for our friends going through the temple for the first time. The talk the sealer gave this couple was awesome! I still think about it from time to time.

Applemania!
I recently obtained a box of apples from a friend. With some of the apples I made a batch of these empanadas. They were so good! We ate them all through conference!
Tuesday's Tidbit
My family has a tradition for the Family Home Evening before Easter. We have a basket of eggs numbered to 12. Each egg has some item that has significance to a scripture relating the Savior's Atonement and sacrifice for us. We love it! It always kicks off our week before Easter and gets us in the true Spirit. May we all remember what Easter is truly about!

Memory Lane Monday

I am admitting to being a terrible sister. My brother's birthday was 15 February and I never posted anything about it. Part of the problem was, that Derek and I had gone to San Diego to escort our friends through the temple for the first time. Even still, I could have posted a day or two after, but, no, it had to be two months after.
So, Happy Big-Time-Belated-Birthday Brother! You are awesome, and I am so excited to hear your songs remixed. Thanks for all the fun we had as kids. I always felt safe with you driving to school with me, or walking with me to the store to get stuff for mom, and especially during Halloween and running throughout our neighborhood getting candy.

Things to Think about Thursday

This past Saturday I had the opportunity to attend the General Young Women Broadcast for the Church of Jesus Christ of Latter Day Saints. It was fantastic! I recommend all the talks, but, I wanted to share two thoughts from the broadcast that has really had me thinking.
Elaine S. Dalton, General YW President, shared how when she was a Young Woman they each had to pick a symbol that was to become their personal banner. Sister Dalton picked the white rose as her personal symbol. She picked it to represent purity. She asked each of us to think of what our own symbol would be. I have to admit, this has really made me think. How can I pick just one? Ideas have come, but, I need to pick one, one that is most important to me. Do you know what you would pick for you? She then told us that when she was called to be the General Young Women President, President Monson gave her a white rose! Awesome!
My next thought comes from President Thomas S. Monson, our Prophet. He talked to us about having courage. Courage to refrain from judging others, courage to be chaste, and courage to stand firm for truth and righteousness. It was great. He shared a quote from Mother Teresa: "If you judge people you have no time to love them." I love that! I have been trying to keep this in mind whenever a judgemental thought comes to my mind. I have been trying to banish it and replace it with Mother Teresa's thought. It has really helped!
I 'm grateful to have opportunities like this to learn and grow from, and I look forward to more opportunities in the future!

Whimsical Wednesday

So, you'll never believe what happened to me today! A few weeks ago I entered a business sweepstakes online. I've always wanted to have a bakery, but money is an issue. There is an empty building here in town by the Tokyo House that Derek and I thought would be a great place to put it. Well, this morning a Fed Ex guy came to the house after I dropped the kids off at school and gave me one of those cardboard envelopes. I haven't been expecting anything, so, I was curious to see what it was. I opened it up and found that I WON! I won the business sweepstakes prize of $50,000 dollars! I was screaming all through the house!!! To have access to the funds I have to show proof that we will use it toward starting our new business. We are going to start a bakery!!!! Here in Ridgecrest!
So, my question to all of you is: Did I get ya';)
April Fools! Dreams can come true, but, we'll take the work road to get there :)
